I just pick through a pound of pinto beans (for rocks and little bad ones). Rinse them and soak them in cold water over night (I usually set them to soak in the evening and then before I go to bed dump the water and start fresh again).
Then in the morning I dump the water out and put the beans in the crock pot with an onion peeled and cut in half, salt and pepper, and a piece of ham. I don't use the hock things with the bones but get one of those little boneless things.. I think they're called butts You get them at the grocery store by where they have the packages of ham steaks and chopped ham and such...
Anyway, all goes into the crock, covered with water, on high for 6 hours or so. I check them after about four and add more water if I need to.
ETA: oh, and towards the end you pull out the ham and chop it up and toss it back in.
