Cupcake frosting tips?

A couple weeks ago I did a practice run making cupcakes for DS's b-day.  The cupcakes came out fine, but the frosting? Not so much.  It tasted good, but was too goopy to look good.  I'm doing banana cupcakes.  The frosting I made was a cinnamon cream cheese frosting.  Any pointers for a frosting that looks a bit better?  Would a buttercream be less goopy?  Should I pipe it?  And if so, what kind of tip should I use?  TIA!

Re: Cupcake frosting tips?

  • I would use a tip....this one:

No. 2110 (1M) Open Star Decorating Tip*

will make it look like this:

    Soft-serve swirl cupcakes

  • Loading the player...
  • Cream together 2 sticks of real butter(salted) with 2 blocks of cream cheese both room temp. Slowly add a box of powder sugar. I add a little lemon extract, but with a banana cake, i would do vanilla. Sometimes, depending on the weather, i have to add a splash of milk. Save that for the end, its not always needed.

  • Did you use enough cream cheese? Depending where you got your recipe from, they are not always 100% accurate.  Maybe add more cream cheese?
  • also, i did pipe it, and put them into the refrigerator to set it, i was afraid they woulf run. They were fine. No fridge needed.

  • I am interested to see others ideas, because I have NO CLUE how to frost a cupcake with a tip and what the heck is piping?

My advice- order them and pick them up.

I have no idea.  I thought I might experiment with some recipes this weekend.

  • If you take your frosting and microwave it for very short intervals till it is pretty smooth.  You can then take your cupcake and dip in the frosting and slowly roll it back and forth brinigng it out.  Then the frosting dries and is prefectly smooth.  I have not tried it with homemade frosting yet just the kind out of the can.
  • Piping is super easy. go to youtube and look up How to frost a cupcake. There are some great tutorials in there.!
