I like Estelle and would call her just that, not Stella. Stella seems like its own name to me, not a nn.
Anastasia is ok, but if you hate those nns, then just avoid it. I think they're bound to come up even if you insist on calling your child by her full name all the time.

Anastasia. I really, really want like it. The only problem is, I knew an Anastasia, and she was taller than all the girls and most of the boys, and she was big boned too. People called her Manastasia behind her back, so that is forever etched in my brain.
