My DH and I want a video or OUR expressions when DD is born and some pics of him cutting the cord, etc. But who do we have do it? Should we have someone extra in the room (like his sister) in the room during the whole thing, or have her on call so DH can call her right before she comes (DH's idea, I don't think he'll be thinking of that!) Or will the nurses do it? I really only want my DH in room during labor but am open. Any advice would be great! TIA!

Check hospital policy on # of visitors allowed in the room.
No, the nurses won't do it as they'll be busy WORKING during delivery. They aren't standing there for fun. You may be able to have one of them snap a quick picture of the cord cutting, but that's not guaranteed.
