I have five whole bushels of apples in my kitchen right now. I'm planning to can some applesauce, apple butter and apple pie filling. Anything else yummy I can do to preserve them?
There is a recipe (i'm sure it's online) for a type of clay you make with applesauce. Then you can use it to make things like christmas ornaments using cookie cutters. When they harden they smell like cinnamon apple for a long time.
I think you can just peel and dice them up. Either sprinkle with fruit fresh or lemon juice and freeze. I'd freeze on a flat tray and then put in ziplocks.
They'll be soft when you defrost them, but should work fine for pancakes, cakes, muffins, and other baked goods.
It is probably labor-intensive, but I love apple jelly...it is smooth and clear so probably involves a lot of straining....I'm sure you could make a lumpier jam, though.
this one is yummy too:
1. cut up the apples into slices
2. peanut butter fudge (just take real peanut butter that separates, a couple of teaspoons of water and powdered sugar and mix to a thick consistency!)
3. dip the apples in or coat with back of spoon and store in the freezer YUM!

Maybe some apple salsa? A co-worker was telling me about a friend that makes really good pear salsa while I was talking about my pear trees (and getting stung the first time I tried picking).
I had a TON of apples a couple of weeks ago. Here's what I did. Applesauce, apple butter, apple crisp, baked apples, apple dumplings, and apple waffles. Then I got tired of apple everything, so I cored, peeled and sliced the rest and stuck them in the freezer. I pulled out my first bag last night to make an apple cobbler and they turned out fine. I plan to make apple muffins, apple pie, and apple pancakes with some of the frozen ones. You could also bake pies, muffins, etc and freeze those if you didn't want to freeze the apples themselves. Have fun!

The only three things that I can think of that haven't been mentioned are baked apple chips, fruit leather, and apple cobbler (so easy, so delicious).

Good call. I actually have a dehydrator and I didn't think about using it. I bet my boys would love some apple chips!
We skip baby food, EBF for the first year and then go straight to solids.

I am a big Apple Crisp fan. There is nothing like the combination of apples, cinnamon, butter, flour and rolled oats!
