Peel, slice and freeze. I like to freeze them and use them during the holidays for pies or apple crisp. You could also make baked apples - so good! Put them on salads, though that wouldn't take many.

I just got home from the cider mill and I'm about to make some apple dumplings! Here's the recipe I will be using (I made them last weekend and NEED them again!)
Okay Apple Dumplings! Apples ?peel and core six medium sized apples and set aside ?mix 1/2 c sugar with 1 tbsp cinnamon in small bowl (this will be sprinkled in the centers of the apples before you wrap the dough around them) Dough 2 c flour 2 tsp baking powder salt 4 tbsp vegetable shortening 3/4 c milk ?mix dry ingredients together, add shortening and milk ?roll out, cut into six pieces and place an apple in the center of each Sauce ?melt 1/2 butter (one stick) and 1/2 c sugar in 1 1/2 c boiling water (once everything is melted, I let the mixture simmer on low until I am ready to use it) Directions ?Divide sugar/cinnamon mixture evenly among the centers of the six apples (which should be sitting in the center of your rolled-out dough pieces) ?Pull dough up over sides of apples and fold and pinch as needed to close completely. Place pinched side down in a cake pan ?Pour sauce over dumplings. There will be a lot in the bottom of the pan splooshing around the dumplings. This is a good thing. ?Bake at 350 for 40 minutes ?Spoon gooey sauce over dumplings and return to oven for 20 minutes

Apple butter. Basically just make applesauce but keep it simmering all day until it thickens and the sugars start to caramelize. You can just put it in a crockpot and stir every now and then. Then put in a quart jar and enjoy on toast (or freeze). So yummy!
You could make apple stuffing to go with a roasted chicken. I like apples with sauted red cabbage and some apple cider vinegar.

2011 Reading Challenge
I went apple picking last week and have a TON! Like almost 40 lbs. lol Here's what I've done or am going to do:

Apple Waffles (Apple pancakes are good too)

Apple butter: I did mine in the crockpot and it was super easy.

Eat with peanut butter
