I have made enough to split over two days... but not any longer. I would worry about the eggs in it. if it's for longer than that, I make it, put them in sandwich bags and freeze in portions (2 in a bag). speaking of... I should do that this week.. my kids are starting preschool this week.
Like Halo, I've made enough to use over 2 days....maybe 3 if it looks ok on the 3rd. Usually I get paranoid though

Another "make a triple batch and freeze them" gal here. We toss them in the toaster oven each morning. We eat off one batch for a full week.
But.... I wonder now if you could freeze the batter?
Put it in a freezer bag, thaw overnight and then just snip the corner of the bag and squeeze out for cooking?
hmmmm.... may have to try that.
