I feel like I should know this butttt I don't...do you put one of those window shades on both windows in the back seat, or just the side the baby is on? what about if baby is in the middle?

Usually you just need them on the side that LO is on but depends on the car. I drive a 4runner and my LO's infant seat is in the middle. I don't need on for my car. DH drives a Tundra (truck) and he needs them for the back window and both side windows at times.
I would recommend getting one that is like a big sticker instead of the roll down ones. The roll down ones can become a hazard during a collision because of the large piece of heave plastic/metal that can come undone and fly around.
We bought the cling-film ones. Cheaper, and they work great! We only have it on the side the baby is on, right now. We may need it on both sides in DH's car, but mine is bigger and also already has some tint.

Car sun shades for the windows to block out the sun. You probably won't need them with an infant seat as they have a canopy, but when your kiddo graduates into a convertible, the sun could be a problem!
I have the roll up ones on each side of my SUV with windows tinted. The tint wasn't enough to keep the sun out of DD's eyes.
