wednesday- cinnamon spice rubbed salmon, garlic quinoa, and veggies
thursday- tacos, beans & rice

Mon - summer squash enchiladas
Tues - deciding between spicy eggplant fritters w/caprese salad, or eggplant parm
Wed - oven-fried chicken, whatever veggies we get in our CSA - I'm thinking corn and okra pudding plus tomato cucumber salad
Thurs - farro w/roasted beets, butternut squash, and honey-thyme dressing
Fri - we're going to a bday party so we'll either eat sandwiches beforehand or grab something
Sat - gumbo w/corn muffins

What the heck is Farro and what does it taste like?
Chicken Tequila burgers
Cinnamon spice rubbed salmon- (sometimes do it with pork loin too)
Rub:
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon paprika
1/8 teaspoon ground cinnamon
1/8 teaspoon freshly ground black pepper
I grease 9x13 pan with olive oil and preheat oven to 400F
Then rub spice mix over salmon, cook for 20 minutes or until fish flakes easily.
Garlic quinoa
1 tablespoon olive oil
1/2 cup chopped onion
2 teaspoons minced garlic
1 cup quinoa, rinsed well and drained
2 cups water or broth
Dash of salt and pepper
Saute onion in olive oil for 2-3 minutes; add garlic and continue cooking for another 30 seconds or so. Add quinoa, water and salt to pan. bring to boil then reduce heat then cover and simmer 15 minutes until liquid is absorbed.

Pork tenderloin, fried green tomatoes w/ fresh mozzarella and balsamic glaze
Spaghetti @ church Wednesday night
and I'm leaving for a girls beach trip on Thursday but I think I"m going to make a baked ziti before I go so they'll have something for dinner.
Some of my meals take longer to prepare but most of them are pretty quick.
Caprese Pasta is so yum and super quick. Boil pasta. sautee chopped onion for about 2 mins, toss in a litte minced garlic and a can of diced tomatoes. Pinch of sugar, salt and pepper. After it's cooked down (less than 5 mins) pour in a little cream or ff half and half and turn off the heat. Add drained pasta and toss w/ shredded basil and fresh mozzarella.
For the turkey burgers I made the patties up earlier in the day (ground turkey, teriyaki sauce, breadcrumbs and an egg) and they took less than 15 minutes to grill. I smashed up an avocado for the topping. The sweet potato fries did roast for about 30 minutes.
There is also a lot to be said for us stay at home moms who have all day to do any prep work we need to do. I take advantage of naptimes to do any chopping so all I have to do is throw stuff in the pan when I cook.
Also, cooking got exponentially easier once my daughter discovered Yo Gabba Gabba.
summer squash enchiladas I made these last night and they were soooo good!! I kind of loosely went off of this version, but took ideas from my favorite chicken enchiladas too.
spicy eggplant fritters - I'm probably making them tonight - its a recipe out of one of my cookbooks. So if they are good, I'll type the recipe out. basically you roast the eggplant whole, then scoop out the flesh and mix it with some seasoning, egg, etc and pan fry them.
Beets, butternut squash, and farro - I was just going to fly by the seat of my pants and roast the veggies then toss them with the farro w/some herbs and a honey-thyme dressing. Farro is a grain.. I have actually never had it, but I saw some at Whole Foods last week and decided to try it. Supposedly it has a nutty flavor, and is chewy on the inside and crispy on the outside. I'll let you know how it turns out!
