I have my niece all week, and she is picky... so I'm trying to get her to expand her horizons
Sunday - southern veggie plates - squash gratin, tomatoes w/goat cheese, toated okra
monday - baked summer veg pasta
Tues - black bean burgers w/corn and poblano salsa, sweet potato fries, guacamole salad
Wed - grilled chipotle peach chicken, grilled corn, grilled veggies
Thurs - we're doing a "Ratatouille" theme night - watching the movie in the afternoon and snacking on bread and cheese and "wine" (grape juice) then making ratatouille for dinner
Fri - going out w/some friends
Sat - grilling - not sure what yet...

Tonight- in-and-out style burger
then in no order-
chicken and summer vegetable tostadas
pizza, maybe summer squash pizza
dry rub wild salmon (not sure sides)
flank steak, twice backed broccoli potatoes and a salad
Last night :Pork Tenderloin w/ mushrooms over polenta and asparagus
Tonight: A turkey tetrazzini recipe I'm trying out that so far looks like a FAIL. I'm already trying to figure out something to make in place of it or go over and beg for dinner at my mom's house.
Tues: Salsa Chicken w/ creamy corn and rice
Wed: probably spaghetti or some other kind of pasta w/ sauce and salad
Thurs: Poppy Seed chicken, yellow rice and zucchini
Friday night I think we're having company over and I'm going to try my hand at Indian Food.
I planned 2 nights which is better than I have done for the last 11 weeks or so
Tonight- roasted turkey thighs with mashed potato and carrots and green beans
Tomorrow- I'm out for GNO so DH and C will probably have leftovers from tonigh
Wed- I have a thin steak that I will marinate for steak tacos or fajitas
Thurs- Roasted eggplant and probably grilled chicken breasts and orzo or rice.
I have no idea for the rest of the week.

I could have written Josies post. I have my niece in town all week and she is very picky not to mention a vegetarian, so I am trying to get her to expand her horizons.
(I've been calling her a tarian. Or "the worst vegetarian in the world" because she doesn't eat many vegetables outside carrots and cucumbers)
tonight- fish tacos and napa cabbage slaw
tue- fettucini with creamy roasted red pepper sauce
wed- veggie meat loaf with parmesan mashed potatoes, green beans with shallots and mushrooms. (i'll let her have her silly boca burger in place of meat loaf)
th- mini grilled pizzas three ways (black bean/queso fresco, fig and goat cheese, tomato, basil and mozz)
fri- grilled portabella mushroom sandwiches with mozz, roasted reds, tomato and pasta salad
If I have my way, all this produce will rot in my fridge while I sit at Northside having a baby.
This is a simple week b/c I am back to school.
Mon-out to eat--too tired after 1st day of school.
Tues-chicken, broccoli, pasta toss
Wed-homemade pizza and salad
Thurs-pasta, meatballs and marinara, salad and garlic bread too
Fri-not sure yet, probably out to eat

Last night -- Broiled flank steak with amazing rub, Baked potatoes, spinach/tom salad
Tonight- cream of mushroom chicken, rice, green beans
Wednesday - Spaghetti w/ tossed salad
Thursday- Talapia, brown rice, Broccoli
Friday - Tacos
