I'm making your corn & tomato salad for a group meal that I'm preparing this weekend but corn was on sale at the grocery store, so it got raided and I got the last 3 husks, but that wasn't enough, so I ended up getting a bag of frozen corn from the freezer section. But on the bag it says "For safety and quality, DO NOT THAW", and it had a bunch of instructions on how to microwave it in the bag. So now I'm confused as to how you use the frozen corn for the salad =P Do you just thaw it anyway? I assume we don't want the corn cooked for the salad, right? TIA!!

I can't wait to try it!

hello!  i sent you a msg earlier on FB too, since i can't (figure out how to) post from my phone.  i actually just made this salad this morning and brought it to a potluck picnic

i always use frozen corn, b/c i'm too lazy to cut fresh corn (and it's not always available!).  so i've always used cooked corn...raw is probably good too though!  

what i do is just heat up the frozen corn in a pan on the stove until it's about room temperature - not hot, just no longer frozen.  (hot would melt the cheese).  then drain it, if there's any liquid - and you're all set!  

the frozen corn from trader joe's is especially yummy - that's the kind we always get!

Btw, on posting from the phone--you have an Android phone right? Nexus One from what I remember? On my Droid, I can post if I disable JavaScript under Settings in my browser. Or I can also post using the little HTML button on the right of the top menu of TN/TB text box (to the right of the link/pip/emoticon buttons). Does any of those two methods work for you?

So I made a HUGE (doubled the recipe) batch of your DELICIOUS salad and it was a hit (and all gone too!!) Everyone was so blown away by the uniqueness & creativity of the salad and they raved about it and asked for the recipe! So I'm gonna be passing it on to more people MH and I even "fought" for the last bite of the last bowl of it that I was working on =P I loved it! It was super yummy! I did do one thing a little differently--I added cubed avocados. I had some ripe ones that I wanted to use before they start to get brown, so I just chopped some in and I thought it worked really well THANKS again for sharing your recipe!

oh yay - I'm so glad you liked it and it was a hit at shower!   and ooooh, adding avocado is genius!!  I will definitely have to try that.  MH doesn't like avocado (weirdo) but I'll add it to my portion

and thanks for the tips about the phone!  yes, i have an N1 - i figured it had something to do with js, but i haven't tried it.  I'll give it a shot.  i did try the html option, but can't seem to click that button on my phone...

btw - i'll be down in sj next monday - will book my ticket today and let you know what my schedule looks like.  maybe we can gtg this time!
