Need help with dinner!!! Dani, Britt and anyone else, come in!

Okay so I have pork chops and apricot preserves.  I've seen a receipe where they used the preserves as a baste.  My oven is broken so I am going to have to use the stove top.  I don't want to grill outside, but I do have one of those small electric grills.  So do you have any ideas???

Chick Breasts, 1 tbsp canola oil, 2 garlic cloves, 1/2 cup sweet n sour, sauce, 1/2 apricot preserves, 1 tbsp dijon mustard, 1.2 cup DRIED apricots (chopped), & Brown Rice.

Brown Chick in oil, drain fat. In a bowl, combine sweet and sour with apricot preserves, Dijon mustard, dried apricots.  Pour over chicken, cover, and simmer for 45 minutes or until chicken is thoroughly cooked. Serve over rice.

Apricot BBQ Chicken

1 lb boneless skinless chicken breasts, cut into large chunks 3 cloves garlic, minced 1 tablespoon olive oil 1/2 cup apricot preserves 1/4 cup barbecue sauce 1/4 cup water 2 tablespoons onion soup mix hot cooked rice

cook chicken and garlic in oil until browned, about 6 minutes.  IN a bowl, combine the garlic preserves, bbq sauce water and onion soup mix and pour over the chicken.  Cover and simmer for 30-40 min until juices run clear.  Serve over rice!
