Pesto (you can make a bunch of it and freeze it in ice cube trays for use later), caprese salad or sandwiches, tear up some leaves and eat it in a salad, make a kicka$$ tomato basil pasta sauce (but I don't have a recipe for one or I would).
We learned our lesson last year. We had WAY too much. This year, it's just right. One plant is plenty for our family.
Stuff a chicken breast with goat cheese and a few basil leaves. Rub the chicken with olive oil and S&P. Bake on 375 until done. YUM.

Sounds like a win-win situation Now we just need to actually get together - haa haa! The Trader Joe's near me had huge basil plants for $1.99 each - so of course I had to buy two of them... I'll probably manage to kill them by the end of next week (basil plants have become kind of disposable around here - ooops!)

Pesto freezes beautifully. I put 1/2 cup amounts into plastic containers and shove it in the freezer. It lasts forever in there.
