NPR: What to do with lots of fresh basil

Besides making pesto or just drying it?

I need some new ideas with what to do with all this fresh basil :)

  • Eat caprese salad every day (or salad with basil and feta).  I have yet to make pesto b/c I eat the basil in salad too quickly.

  • I put it in a lot of my dishes.  I made lemon pasta last week, and it had a lot of basil in it.  Caprese salad is good too.  Or a caprese sandwich.
  • Slice it really thin and eat w/ watermelon. It's delicious. Add some feta and you're gold.

    YUM!  Haven't tried this combo yet... guess what's being served as a side with dinner tonight :)

    Yeah, lots of salads and pasta dishes around here, too - I just bought too many basil plants this year (nice problem to have - haa haa!)

  • Stuff a chicken breast with goat cheese and a few basil leaves. Rub the chicken with olive oil and S&P. Bake on 375 until done. YUM.

  • Pesto (you can make a bunch of it and freeze it in ice cube trays for use later), caprese salad or sandwiches, tear up some leaves and eat it in a salad, make a kicka$$ tomato basil pasta sauce (but I don't have a recipe for one or I would).

    We learned our lesson last year. We had WAY too much. This year, it's just right. One plant is plenty for our family.

  • Pesto freezes beautifully. I put 1/2 cup amounts into plastic containers and shove it in the freezer. It lasts forever in there.

     Sounds like a win-win situation :)  Now we just need to actually get together - haa haa! The Trader Joe's near me had huge basil plants for $1.99 each - so of course I had to buy two of them... I'll probably manage to kill them by the end of next week (basil plants have become kind of disposable around here - ooops!)
