Can you share your technique for freezing tomatoes?  I am about to receive a motherload of fresh tomatoes from my Dad's garden.  I was going to can them, but I am intrigued by the idea of freezing them.  Where do I find this info?

  • I just freeze them whole in freezer bags. Only freeze the ones that don't have any bruises or cuts or tears in the skin. When you are ready to thaw, just cut an "x" in the bottom and thaw under warm water for about a minute. You can then basically squeeze the skin off in one whole pass. The tomato isn't fully thawed, but it's easier to cut frozen and place it into whatever you are eating. So easy! I only use my frozen tomatoes when I am making a stew, soup, throwing into spanish rice, or a pasta. Only when I cook it.

    I haven't thawed one and tried to place it on a hamburger or anything. Plus, I really only grow roma tomatoes as I like a heartier tomatoes instead of one with just tons of juice that you typically see on a hamburger.
