I have a big box of leeks from a friend's garden. I've only ever used them to make potato leek soup. There's no way in hell I'm interesting in making/eating soup when it's this hot!
I have no idea how to use them. Any other suggestions beyond soup?
We put leeks in our stuffing, but it may be a little warm for that right now. I like allrecipies.com they have a place where you can put in ingredients you have, and ingredients you don't want to use, and it will bring up recipies accordingly.

scalloped potatoes w/leeks & ... gruyere maybe? It's a barefoot contessa lemme find it.
Found it - it calls for fennel but I hate it so I did leeks. YUM. Was also thinking you could do a lentils/rice type thing with the leeks.
