I have a recipe for zucchini muffins but it calls for 2 eggs. DS cannot have eggs. Is there anything that I can substitute so he can enjoy the deliciousness too?
Here's the recipe:
Zucchini Muffins
Makes 12 muffins (or 24 mini muffins)
1 Cup All Purpose Flour
1 Cup Whole Wheat Flour
1 Tsp Cinnamon
1/2 Tsp Baking Soda
2 Tsp Baking Powder
1/2 Tsp Salt
2 Eggs, whisked
1 Tsp Vanilla
1/3 Cup Vegetable or Canola Oil
2/3 Cup Agave Nectar (or honey or maple syrup)
1 1/2 Cups Zucchini, shredded (about 2 small zucchini)
1. Preheat oven to 350 degrees.
2. Place the first 6 ingredients in a large bowl and whisk to combine.
3. Place the remaining ingredients in a separate bowl and whisk to combine.
4. Pour the wet ingredients into the flour mixture and stir just until the ingredients are combined.
5. Pour the zucchini mixture into large or small muffins cups.
6. Bake 15 minutes for small muffins and 20 minutes for large ones.
7. Cool and serve.
Re: Egg substitute
egg replacer (we use Ener-G Egg replacer) or apple sauce seems to work well in baking.
One thing to keep in mind, not for this recipe, but you don't want to substitute more than 2-3 eggs at a time because it almost never works!!
Apple sauce or bananas should do the trick.
I am pretty sure my zuchinni bread recipe doesn't use eggs, went to look for it and realized I lent it out to a friend! Ugh. I'll see if I can get it from her tonight and can post it for you tommorow if you like.

The Ratio to replace 1 egg in a recipe is as follows:
1 egg- 1/4 cup applesauce PLUS 1/2 teaspoon Baking Powder
2 egg- 1/2 cup applesauce Plus 1 teaspoon Baking Powder
Etc.
The baking powder is the key, it must be used with the applesauce.
Not sure about that much baking powder though as the recipe already calls for some....
1 Tbs flaxseed meal mixed with 1 Tbs water = 1 egg
I used it all the time!
