We went to a peach orchard yesterday and I got lots of delicious peaches. Any ideas on what to do with them? There are too many to eat raw before they go bad.

peach pie - skin and pit the peaches, then mash slightly and boil them with some water, sugar, lemon juice, and cornstarch until they thicken (stir constantly); pour over baked pie crust and put in fridge; serve cold with whipped cream - yum
peach shortcake - prepare the peaches same as above, then pour over baking powder bisquits; best warm with whipped cream
also good for topping cheesecake
you can also make baked peaches - halve and fill with butter, brown sugar, and cinnamon; bake at 350 for about 20 minutes
I like to add sliced peaches when I make banana bread during the summer. This recipe's also really good:
A Peach of a Bread
3 cups all purpose flour 1 tablespoon baking powder 1 tablespoon ground cinnamon 1 teaspoon salt 3 eggs 1? cups sugar ? cup cooking oil 1 tablespoon vanilla 2 cups chopped and peeled fresh peaches 1 cup chopped pecans (optional)
Preheat oven to 325?F. Grease the bottom and about ?-inch up the sides of two 8x4-inch loaf pans.
In large mixing bowl, stir together the flour, baking powder, cinnamon and salt. In a medium mixing bowl, beat the eggs, then stir in the sugar, oil, and vanilla. Add the egg mixture to dry ingredients, stirring just until moistened. (Don't overmix.) Fold in the peaches and nuts. Spoon batter into the prepared pans.
Bake in a 325?F oven for 55 to 60 minutes or until a toothpick inserted near the center of each loaf comes out clean. Cool in the pans on a wire rack for 10 minutes.
Loosen edges, remove loaves from pans. Cool completely on wire racks. Wrap and store overnight for easier slicing. Yield: 32 servings (2 loaves).

Also peel slice pit and freeze in chunks or slices.
