I'm going to have a TON of cucumbers and zucchinis soon. I'm going to do my first attempt at making pickles this weekend, but I'm at a loss for what to do with all of the zucchinis. I know how to make zucchini bread, but that might get old. Does zucchini bread freeze ok? Or what else can I use zucchinis for?

I make it into pasta-- healthy and tasty.
I wouldn't freeze it (it turns to mush) but I just found this online:

ooooh!! Roast them. Olive oil, salt and pepper, oven/ toaster oven at around 400* until they get all happy. Toss them in with some angel hair or cappelini. Just add a touch more olive oil and salt.

Make zucchini bread and freeze it.
You can also just cut it up (do a couple different cuts--sticks, slices) and put it in the freezer for later use.
Fry it!

You can make zucchini cookies, too. They're pretty awesome. Last year I made some that were zucchini, dried cranberry, and chocolate chip. They were amazing.
And then there's always this: leave them on a neighbor's porch. I did this with tomatoes last year.
This is what I was thinking too! We took a cooking class in Florence where we made a baked meatball-zucchini thing, it was DELISH. I can find you the recipe if you want

I marinate it with a little balsamic vinegar, olive oil and garlic salt then grill. YUM!

), but I think the stuffed zucchini might go over well. Anything with sauce and cheese is usually ok!
