Zucchini question

I'm going to have a TON of cucumbers and zucchinis soon. I'm going to do my first attempt at making pickles this weekend, but I'm at a loss for what to do with all of the zucchinis. I know how to make zucchini bread, but that might get old. Does zucchini bread freeze ok? Or what else can I use zucchinis for?

  • ooooh!!   Roast them.  Olive oil, salt and pepper, oven/ toaster oven at around 400* until they get all happy.  Toss them in with some angel hair or cappelini.  Just add a touch more olive oil and salt.

  • Make zucchini bread and freeze it.

    You can also just cut it up (do a couple different cuts--sticks, slices) and put it in the freezer for later use.

  • I would use at least one to make fried zucchini.  Mmm.  I haven't had that in years.  Yum, dipped in ranch dressing.  If I had a zucchini here, I know what I'd be having for lunch.

  • You can make zucchini cookies, too. They're pretty awesome. Last year I made some that were zucchini, dried cranberry, and chocolate chip. They were amazing.

     And then there's always this: leave them on a neighbor's porch. I did this with tomatoes last year.

    This is what I was thinking too!  We took a cooking class in Florence where we made a baked meatball-zucchini thing, it was DELISH.  I can find you the recipe if you want

  • OH, and also- I LOVE grated zucchini in my Tuna Salad (raw zucchini.) You can't even taste it. I've been known to use an entire cup to one can of tuna. Nummy.

    I saute zucchini and crookneck squash and add it to spaghetti sauce instead of meat.  It is delicious and healthy.  I also steam it with salt and pepper and eat it that way.

  • I marinate it with a little balsamic vinegar, olive oil and garlic salt then grill.  YUM! 

    I've made this before too and it is pretty yum

    Thanks guys! According to DH - veggies aren't food; they are what food eats - so I need to be crafty and hide them a bit. I know he'll go for the bread and cookies, but the other ideas are fantastic! I'm definately looking forward to trying a few.

    Mine won't eat anything with vinegar (Angry), but I think the stuffed zucchini might go over well. Anything with sauce and cheese is usually ok!
