She goes on average 1-2 times a day on the potty though, is showing lots of interest, and can tell when she's going or needs to go on most occasions.
DD is with me every day except for Tuesdays during the day (she visits IL's), but MIL's schedule changes next week and she'll be with me every day for the next 2 weeks. I was thinking of starting PT next week since there wont break in her schedule.
I have tried to restrict her fluids after dinner but we eat dinner at a different time every night (I get home from work at 5:30 but dinner isn't made some nights until almost 7).
Thoughts?

DD's overnight diaper also weighs close to 10lbs every morning!
And yet over the last week, she has completely PT herself (seriously, I barely did a thing) during the day.
If she's showing interest, go for it! Save the night time PT for later

If we had waited to start PT until DS woke up dry, he would be in diapers forever! His overnight diaper was always super soaked in the morning, but we forged ahead with daytime PT. After we started, he had some mornings where he actually woke up dry - he was learning to not go in his diaper, and that was true for nighttime and early morning, too. When we moved him to underwear, we were still scared to have him sleep without a diaper, so we used to sneak into his room after he was asleep and put a pull-up on him. But after many mornings waking up dry, we stopped doing that and he never wore a diaper or pull-up again. He goes to bed around 7-8pm. We go in around 10-11pm to bring him potty, then stick him back in bed. About once every couple of weeks he wets the bed when he first wakes up, but otherwise he is completely night trained.
We used to let him take a sippy cup of water to bed with him, but we did stop that once we started potty training. Also, we stuck a little potty in his room in case he does need to go when we're not around.
