hippy.. coconut flour question

I want to make some of those reduced-allergy cookies from your blog, but I don't have any coconut flour. I'm going to put some unsweetened coconut in my coffee grinder, but does how fine it is affect the way they set up? I've never made them before. I know i could fudge it but just wondering if you've made coconut flour this way and if it changes anything. TIA.

  • I have done this as well.  I'm all about cheating/futzing in the kitchen.  Do what ya gotta do...right? lol

    gonna do it! also plan some zucchini bars... found this interesting box in the health food store. Ds picked it up and said,"You can make these!" Um, kid, your mommy can make anything and you want something from a box? but it's inocuous enough, called 123 gluten-free cookie bar mix, and you can use applesauce or zucchini or pumpkin or sweet potato plus chickpeas to make it egg-free. Heh, I can always blame it on him if they come out gross. or slather them with chocolate so all is forgiven... :D
