The Gerber stage 2 foods say "sitter". The stage 1 foods say "supported sitter". That being said, we haven't noticed much of a difference. We just buy stage 2 now because there's more food in the pack and Ryan loves to eat!

I just went by what Gerber said. Stage one supported sitter. When he sat on his own he got Stage 2 independent sitter. There really isn't too much of a difference though.

I switched him around 6m when he had mastered the art of eating off a spoon & had tried and eaten all of the stage one foods well.
Stage 2's are more about mixing flavors and he liked them SO much more.
Stage 3's we tried around 8m and he REFUSED to eat them. He hated them, so we jumped right into finger foods.
