We have a lunch potluck tomorrow here at work and I need something to make...but I haven't been able to get creative or even think of a dish I can make. Can any of you ladies help me with any suggestions or recipes??
This takes very little time to make and is good cold as well. I always leave out the chickpeas (haven't found them canned here when I've looked for them) and you could use cous cous instead of bulgar if you want. And tweak with the veggies you like.
A box of tri-color rotini, sliced black and green olives, tomato, green onion, chunks or cheddar cheese, sliced pepperoni, and a bottle or Kraft fat free ceasar parmesean dressing. (You can always add any other veggies you want to it too.)
So many versions of this Broccoli Slaw Salad but this is my favorite Salad:1 bag of broccoli slaw1 package chicken flavored ramen noodles4 green onions chopped1/2 cup sunflower seeds1/2 cup sliced almonds Dressing:1/2 cup canola oil3 tbs. red wine vinegar2 tbs. sugar1 tbs dijon mustard salt and pepper to taste Crush the ramen noodles (before you open them up, it's less messy) and combine with salad ingredients. Whisk together dressing ingredients adding the seasoning packet from the ramen noodles. Toss and serve. For potlucks, I put the dressing in a separate container and add it just before serving so it doesn't get soggy. It's always a hit.

How about a casserole of mac n cheese, that is ALWAYS a hit. I usually make mine with whatever I have on hand but I hear this a great recipe.

How about a pasta salad? It's simple and quick.

Potato Salad w/ caramelized onions, blue cheese, and bacon (good warm or cold)
Velveeta/rotel dip & tostidos
Mango Salsa & tostidos
Greek pasta salad w/ zucchini & feta
Double Chocolate espresso brownies w/ walnuts
*Grape salad*
4lbs grapes
8 oz cream cheese
8 oz sour cream
teaspoon of vanilla
1/2 c sugar
2 T brown sugar
4 oz chopped pecans
** mix the sour cream, cream cheese, vanilla- combine with the grapes
Then top with the brown sugar/pecan mixture-
If you can keep something warm- this is easy:
*Crescent roll roll-ups*
Crescent rolls-->
fill with cubed ham and cheddar cheese
fill others with pizza sauce, pepperoni, mozarella
roll up - sprinkle pizza ones w/ parm cheese
bake-
* Fruit kabobs & dip
pineapple, strawberries, grapes, watermelon on wooden skewers
dip: 8 oz marshmallow fluff mix with 8 oz cream cheese and 1 teasp. vanilla
