Cooking for one?

I haven't had to cook for 1 for a very long time.  I lean towards junk when it's just me, but Dh will be gone a fair amount now and I know that's not the way to go all the time.  Ideas?

    Salads? I think those are always fun to put together when I am by myself. You can make it different every day! You could also alternate in wraps which basically use a lot of the same things as salads.
    Started TTC in 2/09. Dx with PCOS in 09/09. BFP on 11/7/09.
    Dx with Ectopic on 12/7/09. Laparoscopy, D&C, and lost my left tube on 12/08/09.
    01/11 = BFP!

  • For about three years DH was going to school at night for his masters, so I got good at making dinners for one.

    I would make large batches of soup and pasta sauces (pesto, marinaria, etc.) and freeze them. Then I would just add salad and bread/pasta and dinner was served.

     

  • My DH works second shift, we usually split the week each making 2-3 meals and then the other person has leftovers.  You could also freeze half of a dish for another week.  It sucks not eating a meal with DH regularly. 

    When I'm super lazy I usually make breakfast for dinner.

  • I make a big crock pot of chicken to add to my salads. My favorite salad is: spinach, bell peppers, carrots, cukes, sunflower seeds, a hardboiled egg or 2 slices bacon, 1/2 avocado. Mmmmmm. I can seriously eat it every day and not get sick of it.
