Cooking tip?

I am about to cook asparagus.  I love it.  I have never ever successfully cooked it.  I just want to steam it.  That's all.  Thoughts on how to do this without turning it into disgusting mush?

  • I always boil some hot water, then stick a collander inside (so that it hangs on the rim of the big pot) and then put a lid over it, checking it every so often. Until voila! it is ready to butter up and season! GL!

  • Boil it until it turns a semi bright green. Remove immediatly and transfer to ice bath. It will stop it from continuing to cook. GL.

  • I like to use the veggie steam bags (like by ziplock) - I've had the best luck using those to steam veggies.
  • Asparagus only takes about 2-3 minutes to steam and should not be boiled (you loose all the nutrients and it turns to mush pretty quickly).  If you are not serving the asparagus immediately I suggest an ice bath to shock it and stop the cooking process so it doesn't get mushy while you wait.
  • We always grill our asparagus, either on the grill outside or on a grill pan.  I marinate it in balsamic vinaigrette dressing, it brings out the sweetness of it.
