I open his diaper and if it looks like he's going to pee, I put the front of the diaper back up for a few. My SIL puts a baby wipe over her sons penis while changing him, she swears it keep him from peeing, but even if he did, it'd just go on the wipe.

Yep, a wipe generally keeps him from peeing. But then he starts the second you pull it off so you have to be careful. He peed on us constantly the first few weeks, and it has started to really slow down. I just got peed on last night for the first time in a few days.
We also use a wipe and then very quickly change his diaper. He "stands at attention" if he's going to pee on us so we check and if he is we cover his penis with a wipe. Those peepee teepee things aren't worth the money IMO. We have one and tried it and he kicks it right off everytime we try.

this is what we do too. also i open the new diaper and put it under his old one, quickly wipe & put vaseline on and slide the old one out, then quickly close the new one. it has eliminated the peeing quite a bit but he still does occasionally pee everywhere. 1ht.
i just always put the new diaper underneath so as soon as i'm done wiping him the diaper is there to put over it. you almost just have to learn to be quick & dodge it if he does spray at you

I keep a cloth diaper (we use disposables but got cloth diapers for burp clothes) at the changing table. It's rolled up so it's about a foot long and about 3 inches wide. I basically put that on his penis - which not only prevents me from being spray, but also captures the liquid that runs down his sides preventing his clothes from getting wet.

This is exactly what I do too. And it helps if he decides it's time to go #2 also. That's happened to me and it's ended up on the floor, on me and in my hair before!!
I keep his penis covered with a washcloth during changing.
this, or we use a nifty thing called a Wee Blocker and it sits right over his penis so we can change him without being sprayed. It's machine washable and works!

I do this too! I haven't gotten peed on in awhile. Thankfully.

Re: If your baby is a boy...
I would cover his penis with some of the square gauze pads (from his circumcision) while changing him.
Surprisingly he didn't do it that often. DD on the other hand would pee on the changing pad every time I took her diaper off. That was even worse IMO.
