OMG...YUM! Chocolate cupcakes with peanut butter frosting!

Last night DH wanted cake, so I made chocolate cupcakes with peanut butter frosting - SO good!  All the recipes for pb frosting I found had butter in them and we were out of it, so I made this up and it is SO yummy..

First make chocolate cake or cupcakes with your regular recipe (I made a half a batch to make 12 cupcakes)

Frosting -

1/2 c. peanut butter

1 - 1 1/2 c. confectioner's sugar

1/4 - 1/2 c. milk

(you can vary the amounts of powdered sugar and milk to your preference for taste and smoothness)

Beat peanut butter with a mixer until light and fluffy.  Add 1 c. conf. sugar and continut to mix with mixer until well combined.  Add milk a tbps or so at a time until frosting is smooth.  If it gets too runny, add more conf. sugar. 

This made enough to frost 12 cupcakes thickly.

Yummy yummy good!  Oh, and they also taste great cold from the fridge!!!!
