I've not done it before (but are going), but JOEBunny just got back from Mexico and gave me some advice as well as some others (I'll try to go back and find my post in a second) as far as carseats go.
We're going to Playa Del Carmen area in November and will be taking DS1 (who will be 4) and DS2 (who will be 4 mos). I've decided I'll only be bringing DS2's carseat and leaving DS1's.

We've gone to Playacar (Playa Del Carmen area) 3 times with kid(s). We did not take our carseats....
Buy transfers if you're booking through a travel agent/online, you'll be picked up from the airport in a van. We don't buy transfers for the kids, only adults.
Cozumel - you'll either have to fly or will have to take a ferry which is like 45 minutes ride. We have not been there.
We fly into cancun then stay in playacar, love that area. There is walmart in Playa Del Carmen, probably other places too, so I don't bother bringing a lot of diapers with me, only for a day or two, then we make a trip to walmart to get more diapers, especially now that there is a limit on the free luggage you can take with you.

DS2 was still on the bottle both times he went (9 months old and 16 months old) and I asked to fill the up the bottle at the restaraunt before naps/bedtime. I took dropin bottles with me because I was not planning on washing my bottles there... They have milk everywhere, even at the bar (for drinks). We also asked them to make smoothies for the kids (banana, strawberry, milk) at the beach....... and we took raisins and nuts with us at breakfast so we had snacks for them for later. We did not leave the beach from 9am to 7 pm some days and kids just slept on the beach in the hammocks under palm trees.
Take a great stroller. At the airport in Cancun, they give families with small kids cuts in line. It was awesome! We didn't do a carseat. It was just not practical.
Lots of sunscreen and I let her use a bnky on the trip. She napped on the beach and I kind of burrito wrapped her.
