Its our turn to host family dinner night, I was thinking of making a taco bar (ground beef) and getting tortillas for the nephews who are 1.5, almost 2, and 4. I read something about closing off one end with a chip clip...would that work or think of something else?

We do tacos quite often at our house. My girls love them.
We sort of do "modified" tacos. I melt the cheese and meat together on the tortilla and fold the tortilla in half then cut it like a quesadilla. You could probably melt the cheese and meat together and roll it up, as well. That way the stuff won't fall out.
We usually do fresh veggies off to the side--they probably wouldn't eat the taco if it had the lettuce and stuff in it.
They do tacos at daycare but I have NO idea how they serve them there. My guess is it is a big mess and they wind up eating with forks/spoons and their fingers.
We do tacos here....for the kids (2/4) I do meat/cheese/lettuce and maybe sour cream in a rolled up totilla. i but it all over, then roll from one side to the other and cut in half. DD usually loses 1/2 her 'stuff'', but DS does fine.

My dd loves tacos, too, and we just fold the ends in before rolling. She knows not to set it down!
Just make sure the meat isn't too spicy for them.
envelope fold the ends to hold everything in, or just fold it in half like a quesadilla and cut in triangle slices.
Or, cut up so they can eat it with a fork if they're picky. DD only does hardshell or fork.
