We have radishes in our garden & MIL gave me some. I'm not really a radish fan, but I REALLY like this salad.
Radish Cucumber Salad - Serves 4
2 English cucumbers4 to 6 radishes (to equal 1 cup)3 tablespoons cider vinegar
2 teaspoons olive oil
1 teaspoon sugar
1/2 teaspoon coarse salt, plus more for seasoning
Ground pepper
2 tablespoons minced red onion
Peel cucumbers. Halve lengthwise; scrape out any seeds witha teaspoon. Slice cucumbers very thinly on the diagonal.
Thinly slice radishes. In a large colander, toss vegetableswith coarse salt. Top mixture with a plate that fits inside colander; weightwith a heavy object. Drain in sink 20 minutes; squeeze vegetables in papertowels to dry.
Transfer to a bowl; toss with minced red onion, cidervinegar, olive oil, and 1 teaspoon sugar; season with salt and ground pepper.Serve immediately.
Oh Hughes, I got you covered on the Kale. This is one of my favorite recipes and it uses a bunch of kale. It is so super yummy and I highly recommend topping it with EVOO and some diced raw onion- so good!

Well, this is basically raw, but we used them in coleslaw. Very yummy.
Oh, and DH and I had forgotten how bitter they can be by themselves. Definitely eat them with something else!
