I always make quiche lorraine from the betty crocker cookbook.
They tell you to use half and half in the recipe, but I use DS's whole milk. Skim isn't heavy enough, but the half and half is too heavy IMO.
Oh, and make sure that you don't overfill it. For whatever reason, I always have too much filling. It doesn't look good with cooked egg leaked under the bottom of the pan.
Off the top of my head here: I make the dough, shape into pan, and bake half-way in the oven first. Then make the mixture in a separate bowl using whatever filling: beaten eggs, shredded cheddar cheese, diced ham, green onions... or beaten eggs, shredded cheddar, chopped spinach, finely diced red onions. Throw some fresh herbs to taste, and pour into your dough-lined pan. Bake at 350 for 30-45 min depending on size of quiche. And voila.
