Ok...a few PDX ideas for you (btw-not sure if you are bringing LO's, but let me know). Not sure if you have a car, either.
1. A day trip to the Gorge area off hwy 30. It's a beautiful scenic drive, and you can stop at the famous Multnomah Falls and take a small hike to the top. Continue on to Hood River and stop at Full Sail brewery for lunch and poke around the cute town. You can go past Hood River to Hwy 35, drive up to Mt. Hood which is gorgeous, and drive back down the 26 into downtown PDX if you would like.
2. A day trip through the wine country of the Willamette Valley..haven't been yet, but this site seems to have some good recs:

WHile in downtown Portland area: Forest Park is a fabulous GIGANTIC park to go hiking in (right on the edge of downtown...one of the largest metro city parks), Washington Park has the Hoyt Arbortetum, Japanese Garden, and Rose Gardens (and an awesome Childrens museum if you have your LO with you!).
You know about Saturday Market, which is downtown right near the waterfront. The waterfront is a beautiful area to just walk up and down to, and I love walking on the marina . Mothers is a great place for brunch (and get to the market early as it gets super crowded) and within walking distance to the market. After the market, head over to VooDoo Doughnuts on 3rd. There will be a line, but worth waiting for because it's just a fun landmark place. If it's raining, check out Powells books-a gigantic bookstore that is a block large...(if you really love books, go to the rare book room up on the 3rd floor...it's great). It's a portland landmark as well.
I LOVE the "NorthWest"/NobHill area which is easy to get to from "downtown". It has great little botiques and a few cute restaurants as well, such as Papa Haydns. It's such a cute neighborhood and you get a feel for wha the "east side" of Portland is like, even though this is the west side (west of the Willamette River)
As for places to eat, Portland is known for it's beer/microbreweries, DH and I love both Bridgeport (in the famous Pearl district and Deschutes. Kenny and ZUkes is great for lunch (sandwiches) and Hot Lips is great for pizza (in the Pearl).
You can get around easily on the streetcar/MAX (lightrail), but a car is nice just in case you want to go outside of the city.Let me know if you have any other questions!!!
