I make homemade mac and cheese using shredded Mexican blend cheeses, top with KA chicken taco (I actually double the recipe so I have plenty for chicken tacos and plenty for this), sprinkle with more cheese, and bake.
I serve it with a taco salad - bagged version from HEB.

Sure! I just posted it on our blog. I'd planned to do a blog post anyway, since we made it last night.
I should add, I doubled KA's chicken taco recipe, which left plenty to eat with tortillas, some for DH to take to work as leftovers, and plenty for this recipe too.
We make a soup we call "Down & Dirty Soup", which is like a tortilla soup using all pantry stuff plus whatever meat we have leftover - either chicken or ground beef. We just add a can of corn, a can of rotel, a can of beans (whatever we have - usually black), and a can of chicken & rice soup (or chicken broth and regular cooked rice) to the leftover meat and warm it all together on the stove with some chili powder and cumin. KA's tacos make it really tasty! Both DH and I really love to cook, and we make fun of ourselves all the time for this soup, but it is so good and it is ridiculously fast and easy.

This is a great idea. I'm so bummed that I am trying an elimination diet right now. Argh!! I will have to remember this for next week. Yum!
Re: What do you do with the leftovers of KA's taco recipe?
I stand in front of the fridge and eat it with a fork.
Klassy!

LOL me too! If I'm motivated I might stick it in the microwave.

Ditto this. DH loves them in King Ranch Chicken
What are these leftovers you speak of
?
You can freeze it but I only recommend it if you didn't use frozen chicken to begin with. Freezing twice usually doesn't do chicken any favors.
