Pancake recipe for LO?

I thought I read a recipe for a pancake, but instead of eggs and oil, using pureed sweet potatoes or squash. I haven't given LO eggs or milk yet, but he is NOT interested in any cereals and I thought this might be a good alternative. do you know i would use any baking mix or do you have a recipe? Thanks!!

    You can really just make these 'pancakes' with any ingredients you want.  Wholesome baby has recipes and you can just sub with what you feel comfortable with. 

    Grant hadn't had egg yet either but I recently made a batch for him with egg yolk and it was all fine.

    I stopped making the 'baby pancakes' and just started making him regular whole wheat pancakes with formula/yolk and apple sauce and pieces of apple.
