Menu help?

So now that the fabulous world of local meat has opened its doors to me, Bugbear is demanding ham for Easter.

I'm fine with that.

But I don't know what to serve with it. I'm thinking peas with mint, as a side, and then after that I'm completely stuck.

What else should we eat?

And do you have any fabulous recipes for using up leftover ham that you'll share?

  • I love soup with ham and great northern beans.  I couldn't find the exact recipe I use, but it has chicken stock, beans, ham, onion, carrots, and a little tomato paste plus a few other things.  Delish!

    Oh and I would have fresh bread of some sort with your meal for sure and maybe some parslied potatoes.  That's another simple, springy dish.  Enjoy!  I love peas with mint.

  • Roasted sweet potatoes with rosemary and garlic?

    For leftovers you can make a soup with carrots, onions, tomatoes, white beans, and ham. Or a casserole with whole wheat noodles, veggies, and cheese.

  • Roasted asparagus with parmesan.

  • This is what I'm serving:

    smokey deviled eggs for starter

     

    Ham baked with stone ground mustard & brown sugar

    homemade dinner rolls

    fresh green salad

    asparagus with lemon & grated asiago cheese

    skin on mashed w/ fresh chives (from our garden even!)

    cranberry rhubarb sauce

     

    yellow cake w/ chocolate frosting for dessert (it's my dad's birthday and this is what he wants...I wanted rhubarb cream pie and if I am up to it I will possible make that too)
