I boil for 15 minutes (not too hard of boil or the shells will crack) and then put them in cold water and then again. The cold water helps when you are ready to take off the shells so they don't stick to the egg white.

I put them in the pot, cover them with cold water and bring it to a rolling boil. Then you boil them for 10 minutes and douse them in cold water (I actually put a cupful of ice in the chilled water). They turn out perfect every time!

Cover with cold water, bring to a boil, take off the heat, cover for 18 minutes, put them directly into cold water.
