I always use a flat paint. My friend's DH owns a painting co. and said that flat paint shows up in the truest form of the color you paint and it needs less (usually only 1) coat of paint. Plus I don't like the shine that comes with any other finishes.
We're doing a low gloss satin. We just painted big sister's room last weekend and it turned out beautifully. It's a little shiny but doesn't show the imperfections in the walls.
We did a semi gloss on the bottom half... it's white paint so you can't really tell it's semi and I wanted something easy to wash. The top half is an eggshell finish. I personally hate the look of a semi or glossy finish on a wall.
We used Satin, which, as the salesperson explained, is slightly shinier than matte. If you buy good quality paint, it should all be washable/scrubbable, so you can choose whatever finish you like best. For walls, something less shiny usually looks best.
And do buy good paint, it covers better and is much easier to work with. Plus, it will hold up better to abuse! When we moved into our house it was painted with cheap crappy paint and 2 years later it's peeling everywhere, so we've been having to redo it with good paint now.
