Need a recipe with bok choy...

I started getting a vegetable box delivered every Friday from Johnson's Backyard Garden and this week we got some bok choy.  I've never made anything with it before so I'm excited to try a new recipe!  Does anyone have a good stir fry type dish to share?  I'm open to anything!

  • I took a cooking class at an HEB last year and this was one of the dishes we prepared. I now make it all the time. It's easy to substitute/omit any of the ingredients, and the dressing is AWESOME.

    Asian Chicken Noodle Salad

    Serves 4-6

    Ingredients:
    1 C Fiber One Cereal (or fried wonton noodles)
    1 Carrot, cut diagonally or shredded
    1/2 C Natural Almonds, slivered
    2 C shredded Bok Choy
    2 C shredded Napa Cabbage
    5 Green Onions, thinly sliced
    1/2 Daikon Radish, sliced (i usually omit this or substitute regular radishes finely chopped or slivered)
    1 C Snow Pea Pods
    1 rotisserie chicken, shredded

    Dressing:
    5 Scallions, minced
    1/4 C Sesame Oil
    1/2 C Natural Peanut Butter
    2 1/2 Tbs Rice Wine Vinegar
    1 Tbs Low Sodium Soy Sayce
    1/2 Orange, zest & juice
    1 tsp Ginger Root, grated
    1 tsp Mirin Sweet Rice Wine
    1/2 C Water
    6-8 drops Sriracha Hot Sauce
    2 pinches Sea Salt

    Directions:
    1. Preheat oven to 350 degrees. Spread almonds in a thin layer on a baking sheet sprayed with cooking oil.
    2. Bake 7 min or until nuts smell fragran, careful not to burn! Remove from heat and cool slightly.
    3. While the almonds are cooking, toss together bok choy, cabbage, green onions, chicken, daikon, snow peas and carrots.
    4. Once the almonds are cooled, add along with Fiber One Cereal, to greens and toss.
    5. To prepare dressing, blend all ingredients in a blender until well combined.
    6. Pour over salad and toss to evenly coat, or serve on the side.
    7. If not serving the salad immediately, wait to add dressing as greens will become soggy.

    Tip: Use rotisserie chicken for a quick meal, just be sure to discard the skin!
    Tip: This dressing doubles as a marinade for chicken, tofu, pork or fish - it's even great on stir-frys!

  • The recipe posted before sounds yummy, but I'm lazy, so I usually just saute mine with garlic flavored olive oil (so worth it!)
  • I know you asked for stir fry, but we loooove grilled bok choy. We just cut in half lengthwise (greens and all) and brush on EVOO and sprinkle with salt and pepper. Its done once it starts to get tender (not too tender) and the leaves are wilted. So yummy.
  • we just saute with olive oil and toss in some soy sauce at the end.  Whatever you make clean the heck out of it,  it's really sandy
