Our latest faaaaavorite thing to do with a package of ground turkey is so simple, it's silly. It's no frills. It's totally uninspired. But we have it like 2 nights a week, and it's a total favorite (T said the other day "will ALWAYS be a staple in our home")
We split it into fourths...leaving it just as it comes, just quartered. Then spray a pan over medium heat with olive oil cooking spray, let it heat up, pup in the quartered turkey "patties" and pour on some salt. Press down a bit with a spatula. Let sit for about 4-5 minute, flip over...another 4-5 minutes - delicious, perfect, turkey patties. I have to laugh b/c they're not pretty, I don't mix anything else into them and they look just like they do in the package, but cooked...but the turkey has such great flavor when the salt is cooked into it...we eat that with veggies...I'm not kidding - like, 2 x every week around our house. It's been my favorite way to use it up and not add any weightwatchers points to it at all.
Gruel fry the turkey with some onion, salt and pepper. Layer that on the bottom and then add mashed potatos with butter already mixed in. Top with corn. Mmmm!

add a small can of chopped water chestnuts, small can of straw mushrooms, green onion, sugar, soy, ginger, garlic and a touch of oyster sauce. sautee and serve in butter lettuce cups with a bit of brown rice and some hoisin sauce.
