Does Grace work with a very Jewish-sounding last name? My husband seems to think it's too weird, but I disagree. I never associated the name with religion. (btw...I'm Catholic, he's Jewish) Thoughts?

Personally, I think it's a little weird, but not horrible. To me, it's like using Mary, Christian and the like. But I guess it wouldn't be an issue if the child isn't being raised Jewish.

I think it depends on which way you see the word "grace". There is grace in Christian sense, or there is grace like a graceful movements of a ballet dancer or the classic elegance of Grace Kelly or Audrey Hepburn.
I immediately thought of the later concept, so I'd say go for it.
I'm just throwing this out there but the Hebrew version of Grace is Hannah. I don't think there's anything wrong with Grace in your situation but if you're looking for a compromise...

It is a Christian concept so might be weird if y'all are raising her Jewish. Otherwise, not sure that it would matter. Maybe the suggestion of Hannah or use it as a middle name instead?

I don't think the problem is how it sounds or flows - the question is, what religion will you raise the baby., if any? If you're raising her Jewish, it's weird. If you're raising her Catholic, it's fine. If you're raising her "both" or neither, it's up to you and DH.
I know a greek-jewish family that adopted a chinese baby - so she's chinese with a greek first name, and jewish last name. I think that's beautiful. I wouldn't worry about mixing 2 cultural names, unless it doesn't fit with how you're raising her.
