Okay, I'm a vegetarian making KA's tacos... so I'm lost.
They've been in my crockpot for 3 hours and I have the crockpot that cooks fast (like michelleaxo, I think). I would assume it needs another hour but there is a lot of liquid in the bottom right now.
Is that supposed to cook out?
Am I supposed to take the chicken out, then shred it, then dump the extra liquid?
Did I mess something up?

Take the chicken out, shred it, mix it back in...cook for another 30 min. It will soak up a lot of the liquid, which is part of what creates the flavor, if that makes sense.
We're having them tonight, too.

I have always had a good amount of liquid in mine when they are finished. When I take the chicken out to shred, I don't dump any liquid before re-adding the shredded chicken. I usually let the shredded chicken cook for 1/2 to 1 hour more to absorb more flavor. Mine are usually pretty juicy - I always squeeze out liquid with my tongs when I am putting the tacos together.
Also, you didn't ask, but I thought I'd offer this tip: before shredding the chicken, use a fork to scrape off any fatty scary bits. Part of the reason that I love this recipe is that all the freaky chicken fat grossness scrapes off really easily. It's so much easier than trimming the chicken beforehand.
