Is baking with buttermilk safe?

So I have tried to read the internet from cover to cover on this and can't find a true answer...I made irish soda bread today for an irish feast we are having with friends and the recipe called for buttermilk. The carton says "cultured milk", it doesn't say that is is pastuerized or not pastuerized. My question is...if I have baked it, can I eat the bread? Thanks!

  • I googled "difference between cultured and pasteurized" and from what I can tell  they do generally make cultured buttermilk and yogurt from pasteurized milk,  they just add bacteria after pasteurization to it to "culture it" to the right consistancy.  If you are baking it I would assume the bacteria is killed in the heating process kind of like cooking with alcohol.

  • Yeah - if it's cooked, you should be OK. If you're super-worried about it, however, my mom uses this old trick when she doesn't have buttermilk around, adding a certain amount of white vinegar to regular milk to use as a substitute. You could Google that lickety-split, I'll bet. But I'm sure you'd be fine with baking buttermilk.
