I made your penne bake last week and I LOVED it and DH thought it was pretty good (and that's saying a lot!).  I used mild sausage since we don't like things too spicy and I just browned it like ground meat and that seemed to work really well.

I have a question though- can you freeze the sauce?  Like, if i wanted to make a double batch, can I freeze the sauce in tubberware?  How would I go about doing it?  Do I brown the sausage like normal, mix the sauce and then freeze?  Have you ever freezed it and how do you do it?

  • i actually have frozen it! i rarely freeze stuff.

    i basically let it cool after combining everything, i line a baking dish with foil and stick in the freezer.  once the pasta is frozen, i remove it from the baking dish and wrap the whole thing in foil & return to the freezer and put away the baking dish. then when you get ready to make it you can just pop the block of pasta out into the baking dish!

    i've found that it needs to be covered in foil when reheated though cause it takes longer to bake, the pasta on top can get kinda burnt/crunchy but the foil helps with that.

  • I don't mind cooking the pasta fresh, would just freezing the sauce/meat mixture work?
