Any tofu eaters?

I love the stuff, but have never cooked with it myself. I bought some today and am looking for some tried and true recipes.

Does the stuff need to cook, or just heat through?

  • Make sure you're using firm tofu to cook with.  The silken kind is good for pies and smoothies and such.  I always like to press it to get some of the water out before I cook it.  My favorite way to use it is in chinese stir-fry-  I just marinate it in soy or tamari sauce and pan fry it in some cooking oil. 

    Sometimes I'll just brush a little BBQ sauce on it and cook it in a skillet too.

    I usually heat some oil in a pan and get a nice brown crunch on the outside of my tofu, set it aside and follow it as directed and then add it in at the end.  I personally hate the consistency of just heated through tofu. 

    I use honey or brown sugar and not the maple syrup, just because we never have it on hand.  I also add in like 3 or 4 teaspoons of fish sauce and just a bit of sesame oil.  The fish sauce is pretty authentic to pad thai and adds a really nice flavor.  It smells really gross, don't let it scare you away though ;)  Also, do not let said fish sauce spill in your fridge.

  • I buy the extra firm.  Dry it with paper towels, cube it, coat it in corn starch and seasonings (garlic, onion powder, salt and pepper), and then either fry it in oil or bake it at 350 on an oiled baking sheet for 20ish minutes (until it looks a little golden).  I make a bunch this way and then add it to recipes throughout the week.

    That is an awesome idea. I am always making salads and looking for something extra to add. Also, I can make stir fry just like I usually do but add tofu to the beef and MH can pick out the tofu and I can pick out the beef.

    How long does it keep in the fridge?

  • I've kept it almost a week but I usually eat it in a day or two!  If it is unopened it'll last for at least a month.

    Perfect. I like making things ahead of time. Plus, I could always add a few cubes to some rice or something. I always have cooked rice on hand. My pickier than picky DS will at least always eat rice so I keep that ready for him in case MH and I want to eat something other than pizza, spaghetti or chicken nuggets, LOL
