I feel so sleep deprived I can barely remeber when & how long LO eats. I know he does, and often. And not too worried about diaper's, because that's all we do is change dirty diapers...
During the first few weeks we would write out everything on a pad of paper. We would tally the number of wet/dirty diapers and the time of each feeding. It REALLY helped. Esp. since we were taking turns and Dh could just look at the paper to see what was going on when.
While in L & D they gave us a chart to keep track of feedings and diapers, so once home DH made our own version using Excel. We don't track sleeps though - just amount of ounces per feeding and start/finish time of each feeding, so we know when the next feeding should be. We track diapers to ensure we are getting enough poops from him .... it's a good thing we do because he has had constipation and if it wasn't for the chart we wouldn't have know when he last went or what the texture was like.

i bf so DH would ask "is he on?" and he would keep track on a pad of post its! I printed the spreadsheet from the bump, but he continued to use his stickies LOL, but if it wasn't for him I would never remember all the details
We use the itzbeen & it's great so we can both kind of know what's going on. Last week, we checked off the poopy/pee diapers on a chart from the hospital. I think we'll go back to the chart because I want to be able to tell the dr. how many of each diaper we have.
I stopped counting at about 1 week. My LO had gained weight at both her one week and two week appointments. So, I figured that was a better measure that the minutes she was on each boob. Also, I change her diaper every time I feed her, which is every 2-3 hours during the day and every 3-6 hours during the night. As long as there's something in the diaper, it's all good.
