Wegmans dedicated an entire Menu to crockpot recipes a couple months ago. All of the recipes are on their website; if you're looking for more ideas.

I feel like I posted this before, but can't remember if it was here.  This was really yummy and full of good veggies.

Asian Pork

In the crockpot, add 1 1/2 lbs. cubed boneless pork with about 1/2 cup teriyaki sauce, 1 onion and 1 red pepper diced.  Cook for 6-8 hours.  In the last 15 minutes, add in 1/2 cup each of broccoli and snow peas.  Serve over rice.
