I made this tonight and it was to die for, sooooo good, filling, and EASY!!!! We made some TS beer bread and a salad to go with it, and it was heaven on a cold, wet, dreary day. The canned ingredients don't even need to be drained, just open and dump!
Ingredients:
1 medium onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce
1 10-oz package frozen corn kernels
2 14.5-oz cans diced tomatoes with chilies (Del Monte)
1 packet taco seasoning
1 TBSP cumin
1 TBSP chili powder (honestly, next time I?ll use more?there was really no ?kick? with just 1 TBSP)
3 boneless, skinless chicken breasts (I put them in straight out of the freezer?no need to thaw)
Chopped fresh cilantro (I don?t use this because I HATE cilantro, but I did chop some for Dave because he loves it)
Combine everything but the chicken and mix well. Place the chicken on top. Cover and cook on low 10 hours or high 6 hours. One half hour before serving, remove the chicken and shred with two forks. Return to crockpot and mix in well. Serve topped with fresh cilantro, shredded cheddar or Mexican cheese, and a dollop of sour cream.
