My fave easy one is to make sweetened whipped cream and fold in crushed sweetened berries (or melted jam in a pinch) . Even easier, but depends on finding good fruit, just top the layers with the whipped cream, then press fresh berries into it and top with the next layer of cake. Good with strawberries, too.

For a simple fruity filling, I would just toss a pint of berries with a 1/2 c. or so of melted raspberry jam.
