This one is suppppppper easy. Put a bunch of fresh spinach, 2 T olive Oil, 2 T lemon juice, 3/4 cup pine nuts, 1/2 cup parm cheese, some salt and pepper in a food processer. Blend it all up and toss with with some pasta. Yummy, easy, quick, good straight from the fridge and Kacey loves it!
The boys are not fond of it either but DH made an interesting discovery: you really can't taste cooked spinach if you put it in something else - especially something salty.
"What do you put it in?" you ask?

angel hair pasta w/garlic, lemon, mushrooms, spinach (fresh) and heavy cream (saute garlic & sliced mushrooms, add lemon & cream and toss in spinach at the last minute)
my mom's "Spinach Shuffle" (used to be called spinach souffle, but it'snot a souffle):
saute a chopped onion in butter, salt & oregano in a small pyrex baking dish. combine 6 eggs, lemon juice, couple handfuls of parmesan cheese, 1/2 cup (ish?) of mayo and pkg chopped, defrosted & drained spinach. Mix with onions. Top with a layer of shredded cheddar cheese and top that with a layer of bread, buttered on one side and cut/torn into bite sized pieces. Bake covered at 350 for 30-45 minutes, taking foil off for the last 5 minutes to brown bread. Yummy!
Okay here is the one that i love. It does not have spinach in the recipe but I just add 1/2 a package of frozen spinach (ours comes in like a brick) to the filling. I do microwave it slightly so it comes apart but it doesn't have to be really warm.
