Tried this for the first time last night- added black beans to it, thinking it'd make a good "black beans and rice" side dish. It was ok, but something was lacking... I'll have to fiddle around with different spices and such next time. But I would also like a few other ideas up my sleeve as to how to make it yummy, so that DS will eat it. He was not impressed last night.

I've come to like quinoa on its own, so I mainly use it like you did, as rice/pasta. But curry is always good on it, as well as plain ol' olive oil, salt and pepper.
I really like quinoa with just some veggies boiled with it--just toss them into the pot with the quinoa while it cooks (I add a lil' more water to the proportions).
It's also good with some mashed-up veggie burgers, olive oil, salt & pepper.

I like quinoa with peas and parmesan.
Another one I really like is a quinoa salad with roasted asparagus.
2c quinoa cooked in 4c water
2 bunches asparagus, cut in 2" pieces
1/2 cup olive oil
2 lemons, juiced
1/4 cup white wine vinegar
12 oz roasted red bell peppers, drained and cut into 1/4 by 2" strips
1c. celery, thinly sliced
1/4c scallions, minced
8c. salad greens
1/4c fresh basil , chopped
Preheat oven to 425.
Combine quinoa with water and a pinch of salt and bring to a boil. Reduce heat to low and simmer for 15 mins, until all liquid is absorbed. Drain well and place in a bowl to cool.
Toss asparagus with 2T of the olive oil and salt and pepper and spread out in a single layer on a sheet pan. Roast in 425 oven for 5-8 minutes. Set aside to cool.
In a large bowl, combine remaining olive oil, lemon juice and vinegar. Add the celery, roasted peppers, scallions, cooked quinoa, and roasted asparagus. Toss gently and season w/salt and pepper.
Serve atop salad greens and garnish w/fresh basil.
That sounds good- I'll have to try that out once I can eat dairy again. DD has a dairy/soy allergy, so my former go-to premade/seasoned cous cous became a no-no. I used to make a dish similar to this though with chick peas- yum!
I use it in a cold salad, with cucmber, feta, peppers etc.. Yum!
Or with curry as mentioned. Parmesan and peas sounds good!
