What do you bake your pizza on?

Hi ladies,

When you make homemade pizza at home, either with your own dough or with storebought dough (ie Trader Joe's) what pan/sheet do you use to bake the pizza on?  Currently I bake mine on a regular cookie sheet (from W-S) and it doesn't brown or crisp on the bottom which makes the crust kind of soggy but the toppings and cheese are cooked completely.  Any suggestions are appreciated.  My friend sells Pampered Chef and I know they have a pizza stone but I don't know if it browns/crisps the crust.

  • My oven has a bakestone with a special heating element to put under it (fancy schmancy ovens that I have). So, my crust gets crispy.

    You can try buying those pizza pans with the holes in them. That would help it get crispier.

  • We have a pizza pan with holes in it that works well.  I really loved my pampered chef stone pizza pan, but when we moved a few years ago, we forgot to get it off the top of the refrigerator.  I don't remember if it made it crispy.  I don't even know if I actually made homemade pizza on that.  I'd have to ask DH!

  • I use parchment paper and put it right on the rack on the paper. Then I slide it off the paper for the last few minutes to crisp up the bottom of the crust. I have a wooden pizza peel and put the dough on the parchment on that to prepare and then to cut.

  • pizza stone all the way. I keep my in the oven all the time. I buy my dough from a local pizzaria and always have some frozen.
  • I have a pizza pan, which is like a round cookie sheet with holes in it.

    When I worked at a pizza place in High School we used what was closer to a round screen or grate. I don't know where they came from though, maybe a restaurant supply web site? We'd put a little cornmeal on the dough so it wouldn't stick (and never press on it once it's on the screen).

  • I have a pizza stone someone gave us as a wedding present but I can't remember what brand or anything. :(  It was a kit that came with some pizza shaped plates, a cutter, and a wooden cutting board.

  • PC pizza stone.  Though we're getting close to the point where we're going to need to make 2 pizzas when we do them, so then I'll probably do the other one on a cookie sheet.  Haven't tried it yet tho!
  • pizza stone all the way-HOWEVER, i have an additional tip for you. we like our pizza crust pretty crispy, so I put the dough on the stone (spread out of course) and bake it for a few minutes alone with nothing on it. THEN, take it out of the oven, put the toppings on it, then back in it goes. makes a huge difference than just the stone alone
  • We recently bought a pizza stone and it is AWESOME.  $20 at target, I think.  We have loved making pizzas since we have had it.

    I discovered that blind-baking the crust (crust only, no sauce or toppings) on the cookie sheet for 5-8 minutes (5 for thin crust, up to 8 for a thick crust) then, adding all the sauce & toppings and sliding the pizza off the pan, directly onto the racks in the oven really crisps up on the crust perfectly!  And no extra equipment to buy!  :)
